The global cost of a healthy diet has increased by 25% over the last five years, surpassing the extreme poverty threshold of $3 per day. Currently, a healthy diet costs $4.28 per person daily, which is unaffordable for 2.69 billion individuals. The challenge lies not in producing enough calories but in making nutrient-rich foods more financially accessible. Unhealthy diets are a major risk factor for global disease burdens, particularly non-communicable diseases.
