Rhubarb, a lesser-known vegetable in Romania, is gradually gaining popularity, especially in desserts. It is available at local markets, particularly in Sibiu. Costel Dumitrașcu, a dedicated grower from Olt, has been selling rhubarb for 25 years, despite its limited use in his region. He cultivates it to meet the demand from Sibiu, where loyal customers seek it annually. Rhubarb is valued for its tart stalks, used in jams and pastries, and is rich in nutrients. Although sales are low, there is a niche market for this unique plant, which has historical significance in Transylvania.
