In the Bas-Rhin region of France, farmers are increasingly cultivating legumes like lentils and chickpeas due to climate challenges. Four farmers formed a cooperative called 'Graines d’Alsace' to promote local production. This initiative gained momentum during the COVID-19 pandemic, focusing on crops that require less water and pesticides. They now produce over 100 tons of legumes annually, doubling their output from 2023. Legumes offer nutritional benefits and ecological advantages, but farmers face challenges with climate conditions affecting growth. The cooperative successfully sells products to local institutions, aiming to increase legume consumption in France.
