The earliest known beer, produced around 13,000 years ago in the Near East, was thick, cloudy, and low in alcohol, resembling a fermented porridge rather than modern beer. Evidence from Raqefet Cave indicates that Natufian communities, who were hunter-gatherers, intentionally fermented grains like wheat and barley. This ancient beverage likely had a variable taste and was possibly used in rituals. Over millennia, beer evolved significantly, with Sumerians and Egyptians contributing to its development, leading to the diverse and refined beers we enjoy today. The introduction of hops in brewing marked a significant change in flavor, which was not common until the Middle Ages.
