Fructul rar din Dobrogea care seamănă cu mărul și cu curmalul. Rețeta de compot a călugărului de la Mănăstirea Dervent: „Când se coace și se zbârcește, devine dulce”
In Dobrogea, a rare fruit called jujuba resembles both apples and dates. It can be used to make a flavorful compote, as shared by monk Efrem Băndărică from Dervent Monastery. The fruit is crunchy when unripe and sweet when mature. The compote recipe combines jujube with plums, pears, and grapes, requiring specific preparation steps for each fruit. The syrup is made with sugar and water, poured over the fruit in a sterilized jar, and then processed for preservation. This unique fruit, also known as the Dobrogea olive, is not related to olives but belongs to the Rhamnaceae family and is believed to have been introduced during the Roman Empire.
